Spaghetti and Meatballs with Veggie Sauce

Spaghetti and meatballs

Sauce-
1 eggplant
1 zucchini
1 onion
5 garlic cloves
2 carrots
2 celery stalks
1 cup of spinach
1 can tomato paste
1/2 cup extra virgin olive oil
Salt and pepper to taste

Meatballs-
2 lbs ground meat (1 lb pork and 1 lb beef)
1 onion ground in a food processor
5-7 garlic cloves ground in a food processor
4 slices of bread soaked in unsweetened soy milk or water (allergy friendly)
1 T oregano
1 t Salt
1 t pepper

Rough chop the eggplant and place it in a deep bowl with heavily salted water. Make sure they are submerged in water. The salt helps remove any bitterness that the fruit may have. Let it soak in water for about 15 minutes. Remove from water and place in a roasting pan.

Rough chop all the other veggies and place in a roasting pan along with the eggplant. Drizzle with the veggies with the olive oil and season with salt and pepper.

Roast at 375 degrees for about 15 minutes. Meanwhile make the meatballs.

For the meatballs, mix all the ingredients together and form into 2 inch balls and place into one layer in a roasting dish. Pour about 1/2 cup of water in the pan and bake at 375 degrees for about 20 minutes.

Meanwhile, remove the veggies and pour them into a large heavy pot. Add a cup of red table wine, tomato paste and water. Simmer, uncovered, for about 15-20 minutes.

Add all the veggies into a food processor to create the sauce. Return to the heavy pot add the meatballs and simmer for about 10 minutes for the flavors to marry.

Serve with spaghetti.

Escarole Soup

Quick Escarole Soup

1 bundle of chopped escarole
1 pound of ground meat (chicken, pork or beef)
4 pints of chicken stock (either from my loaded chicken recipe or store bought stock)
8 oz acini di pepe pasta
Dairy free and egg free Chicken bullion cubes (opt.)

Bring the stock to a boil. Chop the escarole and add it to the stock. 

Meanwhile, make tiny bite sized meatballs out of the ground meat of your choice and add them to the stock.  The meatballs are small small so will cook very quickly. 

Finally add the acini di pepe pasta and cook according to the packaged instructions (about 8-10 minutes). 

If your soup reduced, add some water to it, or add water and a few chicken cubes to make the stock stronger. Be sure to read the ingredients of the chicken bullion cubes that you choose to use. Some corporations add dairy and eggs to their product, so be sure it’s safe for everyone.

Pot Roast

Pot Roast
1-2 lbs beef chuck
1 T flour
1-2 T olive oil
1 Carrot
1 celery
1 onion
1 t oregano
Salt and pepper
1 cinnamon stick
5-7 allspice balls
1/2 cup red table wine
1 16oz can tomato sauce
1 cup water

Season the meat with salt and pepper and dredge it in flour. Heat up the oil and in a hot Dutch oven or pot, sear the meat on both sides. Once browned on both sides, set aside to rest.

Meanwhile, dice all the vegetables and saute in the same pot. You may need to add a little more oil. Deglaze the pot with the wine and rub off all the goodies and yummy flavors that are stuck on the sides.

Place the meat on top of the veggies so it’s not touching the bottom of the pot. The veggies should act as a barrier between the heat source and the meat.

Add the rest of the ingredients (tomato sauce, water, oregano and spices). Lower the fire to its lowest setting, if your stove has different burners meant for lower heat settings, you may want to move the Dutch oven to that burner. Cover the dutch oven and simmer for about 90-120 minutes, or until meat is so tender that it falls apart whin a fork.

Serve with pasta or noodles.

Meatloaf

Meat Loaf

2 lbs ground meat
1 finely diced onion
5 finely diced garlic
1 grated zucchini
2 sliced of bread soaked in water or soy milk
1 T oregano
Salt and pepper to your liking
1/3 cup ketchup

Preheat oven to 375 degrees.

Mix together all the ingredients except the ketchup.

Form into 2 loaves on a baking sheet.

Pour ketchup and smear on top of the loaves. Make sure the loaves are completely sealed with ketchup.

Bake in the oven for 1 hour. Be sure to check that its internal temperature hits 160 degrees.  Enjoy!!
