1-2 lbs chicken drums and thighs
1 large diced onion
1 6oz can tomato paste
1 bay leaf
1 cinnamon stick
5-7 all spice balls
1 t oregano
2 cups water
1 cup red table wine
1/3 cup extra virgin olive oil
Salt and Pepper to taste
1 t sugar (opt.)
Using a heavy pot or Dutch Oven, saute diced onion in olive oil. Once translucent, add and sear the chicken parts, about 1.5 minutes on each side.
Add the can of tomato paste, water, wine, herbs and spices. Mix well so that the paste becomes a sauce Lower the heat and simmer, covered, for about 20-30 minutes.
Keep checking and storing so that the sauce doesn’t stick to the bottom of the pot.
Remove cover and season with salt and pepper to taste. If the tomato tastes a little bitter, add the sugar to sweeten it up.
Simmer, uncovered, for about 10-20 minutes. Sauce should reduce down to be less soupy.
Serve with Greek Style Fries. Enjoy!
