Sweet Potato Fries
1-2 cups vegetable or canola oil (depending on the size of your pan)
5 T extra virgin olive oil
Slice cleaned potatoes into thin strips.
Heat the oil in a frying pan.
Add potatoes to the oil for frying.
Be sure not to over fill the pan. The potatoes should be just covered / submerged in the oil for deep-frying.
Mix potatoes with a fork so that they do not stick together. Deep fry them till they feel crunchy when stored with a fork.
Please note: yams have a higher sugar content and can burn, so keep a close eye on them.
Remove from oil with a slotted spoon and transfer onto a paper towel to suck up the excess oil.
Meanwhile, start frying a new batch of fries.
Transfer strained fries into a serving dish and season with salt.
