Quick Escarole Soup
1 bundle of chopped escarole
1 pound of ground meat (chicken, pork or beef)
4 pints of chicken stock (either from my loaded chicken recipe or store bought stock)
8 oz acini di pepe pasta
Dairy free and egg free Chicken bullion cubes (opt.)
Bring the stock to a boil. Chop the escarole and add it to the stock.
Meanwhile, make tiny bite sized meatballs out of the ground meat of your choice and add them to the stock. The meatballs are small small so will cook very quickly.
Finally add the acini di pepe pasta and cook according to the packaged instructions (about 8-10 minutes).
If your soup reduced, add some water to it, or add water and a few chicken cubes to make the stock stronger. Be sure to read the ingredients of the chicken bullion cubes that you choose to use. Some corporations add dairy and eggs to their product, so be sure it’s safe for everyone.
