5 medium potatoes with the skin, shredded with a thick shredder
1 small onion, shredded
2 t salt
2 t paprika
1 c vegetable oil for frying.
In a medium bowl, mix together the potatoes, onions, salt and paprika.
Heat the oil in a frying pan. Be sure that the oil is hot before you start frying the hash browns.
Form the mixture into small patties (about one to two inches big). Be sure to strain any excess liquid. The patties need to be tight before frying.
Add patties to oil and fry them, on both sides, until golden brown.
Eat hot or room temperature.
