6 chicken drumsticks and/or thighs
3 carrots peeled left whole
2 celery stalks left whole
1 onion left whole
8 oz (1 cup) acini di pepe
1-2 lemons, juice
Salt and pepper to taste
1/2 t oregano
Opt. 3 chicken bouillon cubes
In a big pot, add all the ingredients except pasta and oregano
Fill with water and bring to boil
After 15-20 minutes skim the scum, add the oregano and lower heat to a simmer.
Keep pot covered and simmer soup for about 45 minutes. Add dairy free bouillon cubes if desired to make a stronger broth.
Once the chicken is cooked through, remove all drums and veggies and set aside. Add the acini di pepe pasta to the simmering broth. Note: you nay have to add water to the broth if the pasta makes it too thick. Keep your eye on it.
Meanwhile, dice the carrots and remove the chicken meat from the bones. Add to soup.
Once pasta is al dente, it’s ready to Enjoy:-)
