Mayo-Free Chicken Salad Sandwich
Roasted Chicken Breast cubed
1/4 cup diced Red Onion
1 ripe Avocado
5 Yellow or Red Cherry Tomatoes
Salt and Pepper
Cut the avocado. With a fork, smash the avocado meat in a bowl.
Add the cubed chicken meat to the smashed avocado.
Mix together the diced red onion and the tomatoes.
Drizzle with lime juice, to taste.
Season with salt and pepper.
Make into a sandwich.
