Oat Cakes and Syrup
5 c rolled oats
1 c flour
1 c light brown sugar
1 t salt
1/2 t baking soda plus a little extra for coating the pan.
1 c Crisco shortening butter flavor
1 c unsweetened soy milk
2 c light brown sugar
3/4 c water
1t vanilla or orange juice (opt.)
Preheat the oven to 325 degrees.
Mix all the dry ingredients in a large bowl.
Melt the butter flavored Crisco. Pour all the wet ingredients into the dry ingredients and mix well.
Smear the extra Crisco onto a baking sheet. Pour the mixture into the baking sheet and spread the mixture evenly.
Bake in a 325 degree oven for 20-25 minutes.
Meanwhile, begin making the syrup.
On low heat, mix the sugar and water in a small pot and heat until the sugar gets melted and creates a syrup. About 3-5 minutes. If you are adding the vanilla or orange juice, do so now.
Cut the cakes in squares, top with your favorite dairy free butter and the simple syrup.
