3-5 red potatoes
1 medium onion, finely diced
6-8 garlic cloves, diced
3 T extra virgin olive oil
1- 1.5 lemons, juiced
2 t oregano
Salt and PepperPreheat oven to 400 degrees.
Dice onions and garlic and spread on the bottom of a roasting pan.
Peel and cut potatoes in quarters and spread evenly in pan along with the chicken drums. Be sure not to crowd the pan, make sure theres plenty of room for the chicken and potatoes to properly roast.
Drizzle with oil and lemon juice. Season with salt, pepper and oregano.
Place in oven for 30 minutes. Then turn over all the drums and roast for another 20 minutes.
