Spaghetti with a Light Tomato and Avocado Sauce.
1 lb Spaghetti
Extra Virgin Olive Oil
6-8 diced Tomatoes on the vine
1 small diced Onions
4 diced cloves of Garlic
1 diced ripe Avocado
1 T Sugar
6-8 leaves of fresh Basil
Salt and Pepper
Boil the spaghetti in a pot of boiling water according to the package instructions.
In another pot, sauté onions, garlic, tomatoes and avocado in oil. Add 2-3 cups of water and simmer.
Reduce sauce till you reach your desired consistency.
Stir in diced basil and season with salt and pepper.
Serve over spaghetti.
