Vegan Fettuccine Alfredo
1 lb Fettuccine Pasta
1 T Coconut Butter or Coconut Oil
3-5 Cloves of Garlic
12 oz. Cauliflower florets
Salt and Pepper
Boil pasta according to packaged directions.
In a pot, sauté the garlic in the coconut butter.
Add the cauliflower and 1/2 cup of water.
Cover and simmer for about 8 minutes or until cauliflower is tender.
Season with salt and pepper.
Transfer the cauliflower to a food processor and blend till smooth and an Alfredo sauce consistency.
Pour the sauce over the pasta and toss together.
Add more salt and pepper if necessary.
